Dinner for today!!

My version of 'Laing Spinach'

I've starving for laing so much..Spinach is the best one for alternative and it was great..wanna know my recipe for my laing..by the way you can add red chili pepper to make it hot (optional)

here is the recipe

1 bag of spinach
1 can tuna
pinch of garlic
ginger
onion
shrimp paste or ' bagoong'
Coconut milk
cooking oil

Method

In a casserole, sauté garlic, ginger and onions then tuna
wait for a few minutes
Pour in the coconut milk (gata) and bring to a boil then simmer for 15 minutes.
Add bagoong, salt then bring spinach and continue stirring
continue to simmer until oil comes out of the cream. (I prefer with a little cream)
Serve hot with plain white rice..enjoy

Beef Caldereta

Beef Caldereta is one of my favorite dish . This dish can be made with beef, goat meat or even chicken. but i prefer beef. This is one of the famous Filipino dishes. The nice thing about Caldereta is you can omit some or most of the ingredients. As long as you have beef and tomato sauce, you'll still end up with a good dish and since I don't have any liver spread, I used peanut butter and it turns out good..It's really yummy..I marinate it for 5 hours and boiled it for more tender, And i know It's a lot of work for me to cook this but I Love the feeling of seeing my husband that he was happy with what he's eating..

Sesame Chicken




Ingredients:

* 3 whole boneless chicken breasts
* Marinade:
* 2 tablespoons light soy sauce
* 1 tablespoon cooking wine or dry sherry
* a few drops of sesame oil
* 2 tablespoons flour
* 2 tablespoons cornstarch
* 2 tablespoons water
* 1/4 teaspoon baking powder
* 1/4 teaspoon baking soda
* 1 teaspoon vegetable oil
* Sauce for Sesame Chicken:
* 1/2 cup water
* 1 cup chicken broth
* 1/8 cup vinegar
* 1/4 cup cornstarch
* 1 cup sugar
* 2 TB dark soy sauce
* 2 TB sesame oil
* 1 tsp chili paste, or more if desired
* 1 clove garlic (minced)
* Other:
* 2 tablespoons toasted sesame seeds
* 3 1/2 - 4 cups peanut oil for deep-frying

Preparation:
Directions for Sesame Chicken: Toast the sesame seeds and set aside.

Cut the chicken into 1-inch cubes. Mix the marinade ingredients and marinate the chicken for 20 minutes.

To prepare the sauce: mix together all of the sauce ingredients. Pour them into a small pot and bring to a boil, stirring continuously. Turn the heat down to low and keep warm while you are deep-frying the chicken.

To deep-fry the chicken: add the marinated chicken pieces a few at a time, and deep-fry until golden brown. Drain on paper towels. Repeat with the remainder of the chicken.

Just before you are finished deep-frying, bring the sauce back up to a boil.
Place the chicken on a large platter and pour the sauce over. Sprinkle with sesame seeds. Serve the Sesame Chicken with rice.

Beverage/Drinks


My version of 'Pina Colada '..Since I don't have a coconut cream, I used Malibu for coconut flavor, fresh pineapple, baileys and cherry and it turns out good..

Put all ingredients into an electric blender with 2 cups of crushed ice. Blend at a high speed for a short length of time. Strain into a collins glass and serve with a straw..enjoy

BBQ-All American Feast





These photos are from our dinner date at Famous Dave's Barbecue. They have chicken, pulled pork, ribs, and beef brisket in addition to offering burgers and fish. I ordered the "All American BBQ feast" (shown above), which includes barbecued ribs, Texas beef brisket, and chicken. I also chose potato wedges,coleslaw, beans, corn on the cob and a muffin for side dishes. It was a great experience and great food as well. And, what dinner date would be complete without ordering a drink? We ordered two margaritas. One was made with Mango puree, it was really good. Everything was so good, and there was so much of it, we asked for carry out boxes so we could enjoy another meal of Famous Dave's BBQ... at home.

Puto Pao



I was craving for siopao so instead i made 'puto' steamed rice cake with filling of ground beef..My son loves it and so do I..here's the recipe and hope you like it too :)



TOPPING

cooking oil
1/4 kilo ground pork or beef
2 tbsp. minced celery (optional)
1 tbsp. hoisin sauce
1 tbsp. seasoning
pinch of sugar
pinch of pepper
seasoning
Onion

Puto

3 cups all-purpose flour
1 cup cake flour
1 cup powdered milk
4 tbsp. baking powder
2 1/2 cups water
3 pieces whole eggs



Blend all ingredients for puto batter and set aside for at least 1
hour. To prepare topping, cook ground meat in oil until brown. Add the
remaining ingredients, continue until done. Pour puto batter in greased
small muffin cups about half-full. Add a tablespoon of topping. Steam for
25 minutes.

Christmas is a time for sober reflections and to look back on one’s life.
New year is a brand new page and I make resolutions everyday. But still the same my house chores, Taking care of my Son, making a nice meal for my Hubby..etc..
We spend our Christmas day with my parents in law and friends then we Celebrate New year in our house but I'm still missing my Family in Philippines..Making a comfort food just like this it makes me feel the Spirit of Being in my Family.(Phil) Remember that missing home is normal and not a sign of weakness.
